
I've been so annoyed that Cinco de Mayo landed on a Tuesday for a few reasons.
1-Jeremy doesn't get home until 7:30
2-Kids need to be in bed at 8:00 (school in the morn!)
3-Can't invite friends over for a FIESTA because of first two reasons.
Sooo, I have declared this week FIESTA WEEK!
We kicked off our festivities with some yummy food and a little dancing (while food was cooking, remember no time)
Jeremy had already started making dinner and I don't know what was running through that boy's head, but he was making SPAGHETTI! I would have none of that. Luckily this conversation went on:
Aaron: Daddy, can I have some carrot cake?
Daddy: We ate the cake this morning. (yes, for breakfast)
Aaron:Oh. Can I have some cheese cake?
Daddy: It's all gone.
Aaron: What about cornbread?
Daddy: It's gone too.
Aaron: AWWW MAN!
Daddy: You really want some cornbread?
Aaron: Yeah. :(
Daddy: Ok, I'll make cornbread for dinner.
Back to the SPAGHETTI. He was still planning to make spaghetti and to serve it with cornbread. Until, I reminded him that it was Cinco de Mayo and we couldn't fiesta with spaghetti! Therefore, he opened a can of refried beans, got out some salsa and cheese and served it atop the cornbread. Not authentic Mexican food, but closer than spaghetti. It was really tasty.
While the cornbread was cooking I remembered that we love tres leches cake. So, we found a recipe and I started making it while Jeremy ran down to the store for some whipping cream. Well, I didn't read the whole thing before I started. I just saw prep time: 15 min Bake time:30 min. Well, I didn't factor in cool time. (you can't put the 3 milks in the cake until cool. THEN, it needs to be in the fridge for at least another hour. Sooo, we'll fiesta with our tres leches on Wed. More to come on our festivities!

haha that's fun. I will be eating mexican food the rest of the week as well, cause we made so much.
