Before trying this recipe, I had never had sweet potatoes without brown sugar and cinnamon. I was a little reluctant to try them with salt and pepper instead. Glad I did. This is one my favorites now. This recipe is super easy and so yummy.
3-1/2 cup sweet potato, cubed (skin removed)
3-1/2 cup red potato, cubed (keep skin on)
1/2 tsp garlic salt
1/2 tsp basil
1/2 tsp black pepper
2 cloves of garlic (get that garlic press out or chop up real fine)
Olive oil
Preheat oven to 350*
Mix all ingredients together in a large bowl.
Make sure all potatos are coated well in oil.
Spead potatoes on cookie sheet in one layer.
Cook until potatoes are cooked through (about 30 min depending on size, mine usually take 45 min)
For crispier potatoes broil for a minute or two until well browned.
14 servings of 1/2 cup
